M-A-R-R-I-A-G-E

 It’s just a word, right? but yet it brings on so many complex emotions. Some people base their entire life around this word and it’s meaning. Girls grow up dreaming about falling in love, getting married, having children and spending the rest of their lives together till death do us part, right? Or do they dream about the build up? A wedding? A dress? A ring? Ownership of someone? Big house? Someone to take care of them? I’ve seen a lot of woman who hint at marriage and proposals in their relationships and then rush to plan.. plan.. plan this perfect life without even thinking about what their partners want.

I hear so very often after that dream wedding that just took place that people feel trapped in their marriage. or, that their significant other has changed and that they’re so unhappy. If I had a dollar for every married person who said “OMG, Don’t get married! Stay single”. I’ve always wondered why do these people feel that way? It makes me sad for them. When I get together with married friends and all they do is talk about how lazy their husbands are, how under appreciated they feel and how the love and passion has totally left the relationship. They almost sound like a switch was turned off the moment they said I Do and everything they loved about each other and all the respect went POOF!

I on the other hand have never been married. nor have I ever been close to getting married. Sometimes I feel sad about it because of course it makes you feel like hmm am I not marriage material? Does the person I’m with not value me enough? Maybe they can’t see themselves spending the rest of their lives with someone like me? Whats wrong with me? But than I have to stop myself and say, WHAT THE HELL ARE YOU TALKING ABOUT?? What is the freaking rush? Why is it that once we get into a relationship we start the timer on everything and literally count down and check off all the things that we think are supposed to be happening in chronological order thinking if we don’t get to these “milestones” we are expected to get to in time there must be something wrong with you or the relationship!

I’m starting to realize that this is the problem with society. So many people base their relationships on others opinions and even compare themselves to other relationships they see “Highlights” of. When you begin to do that you are not really being present in your own unique relationship. You are in a race.. a competition really to see who can look the happiest. Pressure from Family, Friends and Social Media and even your own partners can put such a strain on it.

I feel like  strong foundations in relationships aren’t thought of anymore. Everything seems to be so easily pushed to the side even people seem to be replaceable now. Sex, dating and hook ups are so easy now. One search and 100 apps for finding someone’s attention is one download away. You actually start to think what man would want to even be bothered with a relationship when sexting with a complete stranger is so accessible. Any kind of fantasy is one swipe to the right or left not sure what way it is, lol. There is so much distraction for both sexes and that is why the foundation in a relationship needs to be strong. Respect, Trust, Honesty and Love are so important for a happy and healthy relationship. Once you have those you will have to work at keeping those intact. And with everyday insecurities it is an everyday project to make your significant others feel Loved and Respected and to be Honest with them when you are not feeling quite yourselves. Communication is key! Withholding how you feel is the poison in any relationship. Festering feelings will kill your soul. Get it out and talk.

So for me when it all comes down to it, Marriage for me is grow together not apart, work together and not against each other, appreciate the little things and really get to know each other. Figure out whether you want to wake up to them everyday and want to get up and make them coffee just the way they like it. To want to please your significant other in all ways possible. To cherish the quite times and the loud times. To enjoy those simple moments when you guys are just eating ice cream in bed or laughing together or just having a drink with just the two of you and talking about whatever comes to mind. Just remember to take them for who they’re and to not want to change them. Laugh constantly and try not to take everything so seriously. Always make time for each other even when you have children and stop trying to force everything. When its meant to be it will be. Be happy in your moment. Time is non-refundable. Love deeply, don’t be scared to feel vulnerable and also what someone special once told me have faith ❤

 

CINCO DE MAYO

Hey followers or shall I say Hola! Hope everyone is having a happy and healthy day. So Cinco De Mayo just passed as all of you know and I wanted to share a recipe with all of you for amazing fish tacos and a Pico de Gallo recipe that has my boyfriend singing my praises **Which is always a plus 😉

INGREDIENTS:

  • FRESH OR FROZEN FLOUNDER FILETS (or any fish of fancy..lol)
  • SOFT CORN TORTILLAS
  • LIME
  • SMOKED PAPRIKA
  • TONY CHACHERES ORIGINAL CREOLE SEASONING

RECIPE:

  1. THAW OUT FROZEN FILETS IN A BOWL OF COLD WATER. (KEEP FISH IN PACKAGE DURING THE THAWING PROCESS) FOR FRESH FISH BEGIN SEASONING.
  2. PREHEAT OVEN TO 400 DEGREES
  3. ONCE FILETS ARE THAWED OUT SEASON FILETS GENEROUSLY,  BE CAREFUL WITH OVER DOING IT WITH CREOLE SEASONING IT’S SALTY AND VERY SPICY BUT O’SO GOOD!
  4. AFTER SEASONING CUT LIME IN HALF AND JUICE HALF OF A LIME ONTO FISH. KEEP THE OTHER HALF AND CUT INTO WEDGES TO GIVE TO EVERYONE FOR ADDED CITRUS FLAVOR OVER TACOS.

*MARINATE FISH FOR AT LEAST 30 MINUTES.

IF YOU DON’T HAVE TIME TO MARINATE DO IT FOR ATLEAST 5 MINUTES SO THE FISH CAN SOAK UP THE MARINADE. *Trust me don’t skip this part*

5. PLACE FISH ON LINED BAKING SHEET AND BAKE IN THE OVEN FOR 10-15 MINUTES OR UNTIL YOUR FISH IS OPAQUE AND FLAKY.

6. WHILE FISH IS IN THE OVEN HEAT CORN TORTILLAS ON A GRILL, OVER OPEN FLAME ON A GAS STOVE OR IN A HOT SKILLET ON THE STOVE TOP. TURN THEM WHEN SMALL BROWN SPOTS APPEAR, TRANSFER TO A SHEET OF FOIL, AND WRAP.

7. AFTER FISH IS COOKED AND TORTILLAS ARE GRILLED BEGIN ARRANGING YOUR YUMMY FISH TACOS TO YOUR LIKING.

I personally love my fish tacos with my homemade Pico De Gallo spooned over top and that’s pretty much it. The explosion of flavor you get from the spicy citrus flaky fish the warm hug of that corn tortilla and the seriously mouth-watering flavorful Pico is just so amazingly fresh, light and extremely fulfilling you won’t want this experience to end.. Until your jeans start to get tight.. lol

I had cute taco holders that I bought at Christmas Tree Shop awhile ago to hold them in. They also work wonders if you have little ones too! Made some white rice and my famous black beans. Sliced some avocado up and of course had to have an ice cold Corona w/ lime to top the entire experience off.

*QUICK AND EASY PICO DE GALLO RECIPE:

  • 1 LARGE RED ONION MINCED.
  • 2-3 ROMA TOMATOES DICED.
  • 1 JALEPENO MINCED
  • 1/2 CUP CILANTRO ROUGHLY CHOPPED.
  • 2 LIMES JUICED
  • S&P TO TASTE

MIX ALL INGREDIENTS IN A BOWL AND VOILA! THE MOST AMAZING AUTHENTIC FRESH SALSA THAT YOU CAN TOP ANYTHING WITH.

Birthdays, BBQ, Beer and Mormons?

Hello everyone. Sorry I’ve been M.I.A for awhile. April is such a busy month for me. Between Work, Birthdays and Easter it’s a lot. But, I’m really excited to share all the fun we’ve been having.

So to fill you in I turned 30 in the beginning of April, which was bitter-sweet. I mostly am  really excited for what’s to come because it just so happens at this point in my life I’ve never been happier. Getting older is just another step towards the future, which I know holds so much happiness and blessings for my family and I.

Luckily, I have the best boyfriend in the world who took me for an overnight stay in The Big Apple! We had such a blast. We took the train down to Grand Central which I haven’t done in such a long time; we were able to see all the beautiful views of the Hudson River and all the small towns along the way. We then got into Grand Central Station which is always super crowded but I for one don’t care because all I can concentrate on is the history and its beautiful architecture. Especially, the amazing ceiling mural with the different constellations. After trekking through Grand Central and obviously stopping to take a quick picture. We headed out into the mean streets of NYC. We walked to Rockefeller Center and watched the ice skaters which were mesmerizing and a little in Kyle’s words “Theatrical”,  Agreed.

As we leisurely walked around for a bit we came across The Museum of sex. Which was funny and very informational. It’s pretty much a sex toy store once you walk in and as you walk thru to the back there is a maze like museum up stairs with pictures and props dating back to the olden days until present of how and what they used for ehhhhhemmm. Y’all know…. It was very cool to see, if your into that stuff. Which yes we are.

We then went to check in at a new hotel The Riu Plaza Hotel right in the heart of Time Square which was super convenient. Everyone was friendly, the room was clean and pretty. They also offered a free breakfast buffet which was yummy. It was also my first time ever staying the night in the city so I was really happy and grateful.

After checking in we were on to the next part of our day which was FOOoooOOOoD!

So we all know I’m a foodie and Kyle is too so you can’t expect us not to visit an awesome place and not get some amazingly good grub somewhere. We have been seeing video clips on Insider Food on Facebook about Mighty Quinns BBQ in NYC and you know we needed to check it out! All I can say is the pictures don’t do it justice enough. Y’all need to go. They’re known for their Brontosaurus Rib which is ridiculous. But, the Brisket had us at Hello. It was tender, flavorful and juicy with a Smoky and Sweet BBQ Sauce they had at the tables which was a perfect harmonious pairing! The sides were phenomenal too from there Burnt ends Baked Beans and Cajun mac& cheese to their cool, crispy, vinegary cole slaw.The rustic decor and overall relaxed down back country feel of the place made us feel relaxed and content.  Lastly, you know we had to grab some ice cold beers to wash it all down. Overall it was an awesome time and I can’t imagine anything better than eating delicious BBQ in NYC with my Sweetheart.

The day was not over after BBQ even though all we wanted to do was go to sleep and cuddle after this meal.  My sweetheart got us tickets to the Broadway show ” Book of Mormon” and OMG! We laughed the food coma right off. This show was awesome with its vulgar, offensive and completely hilarious outlook on everything that hits a nerve with how sensitive society is today; it totally worked for us! The show was at the Eugene O’Neil Theatre which again was beautiful inside. The cast was incredibly talented and we were blown away by the amazing voices they all had surprisingly. To sum it all up my birthday was a hit and I couldnt have asked to bring it in with anyone else or anywhere else. I’m so glad I can share it with you and hopefully you go visit and experience these places too. You won’t regret it!

Ingredients:

  • 4- 6 Medium/Large Eggs
  • Cheese, Veggies and Any type of meat
  • Salt &Pepper
  • 1/4 Cup of milk
  1. Preheat oven to 350 degrees.
  2. Crack all eggs into bowl, Beat eggs until all yolks and whites are mixed.
  3. Add the rest of the ingredients into bowl and fold into egg mixture.
  4. Spray a muffin tin w/Non Stick cooking spray liberally and fill them with egg mixture.
  5. Sprinkle tops with extra cheese if desired.
  6. Bake for 20-25 minutes. Enjoy!
